Tomato salad with ravioli and fresh basil
A simple and delicious method to use the tomatoes from your greenhouse. A cold pasta dish that reminds you of a summer in Italy. It is of course an option to make homemade ravioli, but if you want to keep it easy, you can buy ravioli in most supermarkets.
Serves 4 (if served as a side) or 2 (if served as a main dish)
Ingredients:
- 400 g small tomatoes (for example in different colours)
- 1 small red onion
- 200 g ravioli pasta
- A bunch of fresh basil
- 2 tablespoons of olive oil
- 1 teaspoon of white wine vinegar
- ½ teaspoon of lemon juice
- 1 tablespoon of maple sirup
- 1 teaspoon of salt
- Freshly ground pepper
Method:
Cook the ravioli in slightly salted water after instructions on the packaging. Finely chop the red onion and half the tomatoes. Chop the basil finely as well. Make a quick vinaigrette out of olive oil, white wine vinegar, lemon juice, sirup, salt and pepper.
Turn the cooked ravioli in the vinaigrette and let it cool for 5-10 min. Add the tomatoes, onion, and basil. Garnish with extra basil on top. The pasta salad is served cold to your favourite dish.
